PJ’s and Homemade Bread!!! YUM!

photo 2Nothing like a day of staying home in my PJ’s making homemade bread and chicken noodle soup with Clara, who is recovering from a terrible rash, to WARM my soul!!

I’m sharing it with you hoping it will WARM your soul too!

Can a virtual loaf of homemade bread do that?? I will share my favorite bread recipe below in case you want to make your own! Compliments of my friend, Jane Merrill !

Braided Swiss Bread

(From Jane Merrill & Karen Sunderland’s book “Set for Life“)

1 quart warm skim milk
1/2 c. shortening
2 T. honey
1 c. warm water (120-130 degrees)
4 c. whole wheat flour (we use hard white wheat)
8 c. unbleached white flour
2 T. dry yeast
1/2 c. nonfat dry milk
1/4 c. sugar
2 eggs
1 1/2 T. salt

Combine warm milk, shortening, honey, and hot water. Combined temperature of liquids should be approximately 125 degrees.  In mixer bowl equipped with kneading arm, mix whole wheat flour, 2 c. white flour, yeast, dry milk, and sugar.  Add milk mixtrue, and mix for 1 minute. Turn off mixer, cover bowl, and let dough sponge for 10 minutes.  Add eggs and salt.  Mix well.  Quickly add remaining flour, 1 c. at a time, until dough cleans the sides of the bowl.  Knead 4 to 5 minutes (speed 2 on a Bosch mixer). Turn off mixer, cover bowl, and let dough rise until almost double in bulk, about 20 minutes.  Turn on mixer to knead dough down.

Lightly oil hands and counter.  Divide dough into 5 equal portions.  Divide each portion into thirds. Roll each third into a 10 inch rope.  Braid 3 ropes together to form each loaf.  Place in a lightly greased bread pans.  Let rise until double. Bake in preheated oven.

BAKE: 375 10 min, REDUCE heat to 350 and bake 20-22 minutes.
Makes: 5  4″ x 8 1/2″ loaves
